My mother will tell you without a shadow of a doubt,that I lalalalalove curry chicken with white rice and cole slaw almost as much as I love conch. But, that is for another time. Curry makes my mouth water when I smell it in the air. I remember when my mom would make this dish, she would literally have to ban me from the kitchen and then I would become obnoxious with the – is it finished yet? question over and over and over and over and over and over again until the curry was actually finished. The Bahamas has such cultural culinary diversity that food is a way of life.
Curry Chicken is made differently depending on your family or who taught you how to make it. When my mum made it she would marinate the chicken and all the vegetables with the curry spice for a few hours in the refrigerator. Then she would burn the curry spice with a touch bit more cumin, coriander and garam masala (burning is a way to release the oils from the spice, filling the kitchen with beautiful aromatics), our kitchen would be an Asian haven.
